Sugar:
Refined sugar has been used extensively for centuries. It is a sweetening agent, a flavor enhancer, a "body" agent, a preservative and a fermentation aid.
Sugar beets are grown in colder climates such as Brazil and the mid-Western United States. The crop is planted in the spring and harvested in September and October. Sugar beets are stockpiled at specific locations near processing plants, and must be fully processed before spring'' warmer temperatures deteriorates the stockpiled beets and reduce their sugar yield. Generally, a beet factory processes beets for approximately six months from harvest.

Granulated sugar is the hardest working sugar around.
Besides being the usual resident of the kitchen sugar bowl, it is the sugar used most often in home cooking. When a recipe calls for "sugar," granulated sugar is what is meant. Granulated sugar is best for baking cookies and breads. It makes dough more tender and gives bread a golden brown crust.
